Vegetables:
1 butternut squash, peeled and cubed
1 red bell pepper, chopped
1 onion, sliced
3–4 garlic cloves

1 tsp smoked paprika
Salt, to taste
Black pepper, to taste

1 can coconut milk (or more to adjust consistency)
Instructions
1. Prep the vegetables
Cut the butternut squash, red bell pepper, onion, and baby tomatoes into even pieces. Leave the garlic cloves whole (peeled). Spread everything out on a sheet pan.
2. Season well
Drizzle generously with olive oil. Sprinkle smoked paprika, salt, pepper, and garlic powder over the vegetables. Toss everything so each piece is well coated. Lay a few rosemary sprigs right over the top.
3. Roast
Place the pan in a preheated oven at 400°F (205°C). Roast for 35–45 minutes, or until the squash is soft and the edges of the vegetables are caramelized.

Remove the rosemary sprigs. Transfer all the roasted vegetables into a blender or pot for immersion blending. Add coconut milk and blend until creamy and smooth. If the soup is too thick, add a splash of water or broth to adjust.
